Daejak – korean green tea
Daejak from Jukro is an organic, hand-picked wild korean green tea from Hadong in the Jirisan Mountains. The tea bushes grow in the middle of a bamboo forest (“Jukro”=bamboo), which provides the leaves with optimal daylight and moisture. The tea leaves are harvested every year exclusively between 8 and 15 May. Because they receive ample sunlight, they have a deep green colour and a wonderfully rich flavour with a strong aroma.
Origin
Wild tea has been cultivated in the Jirisan Mountains in southern South Korea for more than 1200 years. As the tea leaves grow at an altitude of 400-500 metres between rocks and on sloping hillsides, they can only be picked by hand. Wild tea is a completely natural tea, no fertilisers or pesticides are used during the cultivation and production process. The tea leaves are hand-picked and roasted twice in a traditional iron kettle. This traditional Korean, very labour-intensive process produces a particularly full and pure aroma.
Preparation recommendation: Green tea is best prepared with soft water so that it can develop its fine aroma. It is important that green tea is not brewed with boiling water, but only with hot water. The temperature of the water should be around 80 ° Celsius. Let the tea leaves steep for about 3 minutes, otherwise green tea often becomes bitter.
