Sencha green tea from Japan
Sencha green tea is one of the most popular teas from Japan.
The YAME Sencha green tea with its dark green leaves thrives in the Okuyame region.
Okuyame is located in the middle of evergreen mountains at 600 meters above sea level east of the YAME district in Fukuoka Prefecture. This mountainous region has cool temperatures and even in winter, there is regular snow.
These climatic conditions allow the tea plant to thrive in peace without being attacked by pests that are not able to survive at these temperatures. Accordingly, the use of pesticides is not necessary.

Here, too, an old traditional cultivation method finds its perfection when the tea farmers use hand-picked fermented organic fertilizers, called “Bokashi fertilizers”, to help their tea plants grow healthily in a natural way. Each stage in the growth of the plant is meticulously monitored and adapted to the specific weather conditions of each season to achieve the highest standards.
Japanese green tea is usually treated with hot steam for a short time to stop fermentation after being pre-dried with hot air.

Characteristics of Sencha green tea:
Before infusion
- The shape of the leaves: tapering towards the ends, needle-shaped
- Color: dainty small, dark green leaves
- Scent: soft and discreet; exudes the fresh scent of rain-wet grass
After the infusion:
- Color: golden yellow hue
- Scent: rather reserved and reserved; a hint of green tea scent
- Taste: distinctive and solid; clearly accentuated and unmistakable
Preparation:
- 2.5 grams, 70 degrees, 200 ml, 3 min., suitable for several infusions
- Boil the water until it is bubbling to obtain soft water. Soft water is especially important for the preparation of green tea, as only in this way can umami, taste, and aroma unfold.
“The Golden Drop”: In Japan, this is the name of the last infusion drop that goes into the cup and in which umami, taste, and aroma are concentrated. “In this last drop, the effort and reward of our work is manifested”, say the local tea farmers.
Notes on storage: Store closed package in a cool and dry place and avoid direct sunlight. On hot days, it is advisable to store the package in a cool place in a resealable bag.
